Every now and then when I’m doing something in the kitchen that makes my life easier, it smacks me in the face that I haven’t shared it with you all! This healthy spinach and ricotta cheese mixture is one of those things. It’s probably one of the easiest make ahead ideas I have in my arsenal. Considering you don’t have to actually cook anything, this makes perfect sense. 😉
What I love about this healthy spinach and ricotta spread is the amazing versatility of it. It’s great on some toast for either before a training session or right after if you don’t want to eat a whole lot. You can use it as a base to a breakfast pizza on some pita. It can easily turn into a dip of sorts if you like with carrots or Wheat Thins. Maybe mix into some pasta with a little bit of the pasta water to thin it out. You could also mix it into a baked potato for a another fast dinner idea. See what I mean by versatile?!?!?!
All you have to do is take a 16 ounce container of part-skim ricotta cheese and mix in some thawed, chopped spinach. Then I season it with a sprinkle of kosher salt, garlic powder and onion powder. Taste and adjust seasonings. The ricotta cheese has a hint of sweetness to it and the spices add the perfect balance.
This should hold in your fridge for at least 5 days but I promise it wont last that long!

Healthy Spinach and Ricotta Cheese Spread
- 1 16-ounce container of part-skim ricotta cheese
- 1 16-ounce bag of thawed chopped spinach
- Pinch of kosher salt, garlic powder and onion powder
- Combine everything :)
