Mango Avocado Salad with a Spicy Cilantro Vinaigrette
For the longest time I’ve been wanting to do a somewhat Cuban inspired dinner with a smoked pork butt, maybe some rice and black beans and whatever else that popped into my head. Well, what popped into my head was mangoes and avocados. Think about it for a second – how island and caribbean like are mangoes and avocados?!?!?!
Since I was sticking to a more caribbean type of feel, I wanted to stay away from making any salsa’s or guacamole’s. Basically this meant I wasn’t going to make a mango salsa or a guac :). Once I started thinking along the lines of maybe an avocado salad, I realized that the sweetness of mango would compliment the savory flavor of the avocado. Now that I’ve got a mango avocado salad idea, what else could I add that would compliment these flavors?
Lime for starters. Second that with some red onion because red onions are awesome (not sweet like a vidalia or sharp like a yellow) and followed up with a little heat from some jalapeños and chopped fresh cilantro for brightness. I finally ended up making a spicy cilantro and lime vinaigrette for the mango and avocado salad.
Why does it work? You’ve got sweet, savory, creamy, crunchy and herbaceous. It’s pretty much the perfect summer salad. Just remember that even though it has a good bit of lime juice in it, the avocados will turn brown so try making this right before you serve it.

Healthy Mango Avocado Salad Recipe
- 2 ripe mangoes
- 1 ripe avocado
- 1/2 small red onion
- 1/2 jalapeño
- 1/2 cup fresh cilantro
- 2 limes
- 1 tablespoon honey
- 2 tablespoon olive oil
- Tiny pinch of kosher salt
- Start with making the vinaigrette. Chop the fresh cilantro, dice the jalapeño (if you like super spicy, use it all), juice the limes in a bowl and then just add it all. Mix, taste and adjust seasonings. Remember, the mango is sweet, but the avocado will absorb a lot of this.
- Next, slice the onions (1/4 inch thick or so) and then dice the mango and avocados.
- Mix everything together. Taste and adjust seasonings like salt if you like. It should be sweet, acidic, savory, fresh and just delicious!!!
