En Papilliote is just a fancy French term referring to cooking in a pouch. Cooking in a pouch (parchment paper) is essentially steaming in a tightly sealed package in the oven. It also makes for a beautiful presentation. If you do not have parchment paper on hand, a sheet of aluminum foil works just as well.
- Take 1 – 6 ounce piece of fish like salmon. Slice carrots, zucchini, red bell pepper, shallot and lemon very thin so that it cooks at about the same time as the fish. Add in a touch of butter, dash of white wine, salt and some fresh herbs like dill. Wrap up tightly and cook in an oven for 8 minutes at 400 degrees.
