OMG! I’m finally posting my most amazing kale salad recipe! It’s that great kale salad my friend asked me the other night if it was on the website and I was like – no (head hangs in shame). OK – So what makes this chopped kale salad better than everyone else’s? Well, it’s a mixture of a few things. The first being my balsamic vinaigrette. It stands up to the red kale I like to use. Then it’s all the fun things I throw into it.
Cannellini Beans – Dried Currants – Red Onion – Tomato – Sunflower Seeds – Feta Cheese
Does the whole Mediterranean chopped kale salad sound about right now? The beans add a ton of protein to the salad. The currants add a perfect amount of sweetness. The sun flower seeds add a super nice bit of texture and salt. Tomato, red onion, feta – do I really need to say anything about those?!?! It is seriously the most complete vegetarian kale salad. And when I say complete I mean cohesive. The ingredients make sense :).
You want to hear something super cool about this salad too? You can mix all the ingredients together, including the salad dressing and it holds for 48 hours. It could hold longer, it’s just never made it longer than 48 in our house! Oh, when I say “hold” I mean it doesn’t get soggy or wilt. Totally makes it the best packable salad lunch around because of that :).
And I guess if you have a meat eater in the house – I think some dijon and brown sugar crusted salmon would be kinda amazing on top of it.

Chopped Kale Salad
- 1 head of red kale
- 1 15-ounce can drained canellini beans
- 1/4 sliced onion
- 1/4 cup sunflower seeds
- 1/4 cup dried currants
- 1 tomato
- 2-3 tablespoons feta cheese
- 1/3 cup of balsamic dressing
- Make the balsamic dressing or you can use a store bought one.
- Combine all of the ingredients and let sit for 30 minutes in the fridge. It's like a marinating salad :)
- Taste and adjust seasonings like salt, pepper, dressing or maybe the feta.
