Breakfast scramble or recovery snack? Tis the question for this egg scramble with cherry tomatoes and spinach. I say it’s both because breakfast and recovery snacks require a lot of the same nutrition along with speed in preparation. They need carbs, protein and the ability to be ready in WAY under 10 minutes.
Eggs are an obvious choice (for me) since they do cook quickly and are really healthy. Then for added nutrition and protein, I sautéd some cherry tomatoes and spinach with the eggs. I topped a piece of toasted bread with the egg scramble and it was all ready in under 5 minutes and eaten probably just as fast 🙂 I did add in some feta cheese and fresh chives from my herb garden because I can’t help myself. It’s not really all that necessary if you want to save a bit on fat grams.
Quick note: You could easily wrap this in a small tortilla if you needed something portable.
- 4 eggs
- 2 cups of spinach
- 6-7 cherry tomatoes
- 2 pieces of toast
- 1 teaspoon olive oil
- 1 tablespoon feta cheese (optional)
- Get your non-stick skillet to medium heat with some olive oil.
- Slice the tomatoes in half. Break the eggs into a bowl and whisk with some salt.
- Once the sauté pan is heated, quickly sauté the spinach with a pinch of salt for maybe 2 minutes. You want it "just wilted". Set aside on a paper towel. Add in the cherry tomatoes and sauté for 1 minute. Then add in the eggs. Stir and just before they are completely set, add back in the spinach. Mix everything well and place on 2 pieces of toast.
