Smart Uses for a Tomato Sauce
Part of meal planning and saving time in the kitchen is learning how to re-use food throughout the week. A great way to do this, is with making a large batch of a healthy tomato sauce. These ideas are also a great way to use the sauce when you tire of pasta.

|In a large pot, heat 11/2 tbsp olive oil on medium. Add 1 minced red onion and 1 diced carrot and saute until golden, about 10 minutes. Add 2 cloves of garlic minced, 2 tsp minced rosemary or thyme, 1 tsp salt and pepper, and cook an additional; 3 minutes, stirring often. Add 1 1/2 cups cooked white beans, 2 cups tomato sauce and 2 cups water. Bring to a low boil and simmer, partly covered, for 30 to 45 minutes.||Preheat oven to 375F. Thinly slice 2 medium zucchini. Heat a heavy, wide skillet on medium. Add 2 tsp olive oil, then add zucchini slices and saute until golden, 2-3 minutes. Transfer to a plate and repeat with remaining zucchini, adding more oil as needed. In a 9x5 inch baking dish, layer half of zucchini and scatter with 2 tbsp pitted and chopped nicoise olives. Spread 1/2 cup tomato sauce on top and sprinkle with 1/4 cup grated Parmesan cheese. Repeat. Bake for 20 minutes or until golden brown.||In a saute pan, heat 2 cups tomato sauce on medium-low until simmering. Break 2 eggs and gently slip into the sauce to poach, covered, until whtes are firm but yolks are still soft, about 5 minutes. Meanwhile, brush 2 slices whole grain bread with olive oil and toast in a skillet on medium heat until browned, about 3 minutes on each side. Place toast on bottom of serving bowls. Scoop eggs and a few spoonfuls of sauce on top. Garnish with shredded basil.|
