Homemade Frozen Dinner
Meal planning is an important habit to get into if you are a busy athlete or just a busy person in general. Casseroles aren’t a bad idea to make on Sunday and eat throughout the week. Then there is spaghetti sauce that you can freeze in individual portions too. However, if you are anything like me, sometimes I get tired of eating the same thing 5 nights in a row or boiling water seems like a lot of effort. Because of that, I’ve started making my own complete frozen dinners. It’s not really not all that much effort and it really makes it easier to not order out!
About this Homemade Frozen Dinner:
I used my old fashioned meatloaf recipe.
I bought 2 bags of green beans that you can microwave. It’s a great time saving option.
I grabbed 3 pounds of Idaho potatoes along with some milk and butter to make a mash.
Make sure you purchase microwave and freezer friendly containers like plastic ziplock ones or to save money, you can purchase some in bulk from Amazon.
To make this go as seamless as possible, there are a couple multi-tasking actions you will need to do. Start with making the meatloaf first. Then when the meatloaf is in the oven, start making the vegetables.
Tip: Don’t cook the meatloaf all the way. Leave it a bit pink inside because it will cook some more when you microwave for reheating. No one likes dry meatloaf!
Bring a large pot of water to a boil with the potatoes. I like to slice the potatoes for a quicker cooking time. Once the potatoes are cooked all the way through, drain and place back into the pot. Add more milk than you normally would when making mashed potatoes. It helps keep the correct consistency when you go to microwave the dinner. Season with some salt and as much butter as you like. Place in the freezer and microwave friendly container you purchased.
Once the potatoes are cooked, microwave the green beans for 3 minutes. Like the meatloaf, you want to undercook these just a bit for reheating purposes. Just make sure you sauté them for a brief minute with some butter and salt for seasoning if you like. Then place in the containers next to the mashed potatoes.
At this point, the meatloaf should be done almost done. When it is done cooking, pull from the oven and let sit for a 15 minutes so the juices can redistribute. Slice and then place on top of the vegetables or next to them. Once all the containers are filled, place some plastic wrap over the food and then tops. Label and place in the freezer.
Now you have 10 homemade frozen dinners!
